CELLAR

The cellar is the place where intuition takes shape, where grapes become wine, and every choice expresses a vision. My work in the cellar is not only technical: it is listening, exchange, and sensitivity. I guide the producer through a shared journey made of tastings, ideas, reflections, and small details that make the difference. I believe in consulting that does not impose, but suggests; that does not standardize, but enhances identity. Every wine is a story, and my role is to help tell it in the most authentic way possible.

  • DEFINING A WINEMAKING STYLE
Analysis and strategic dialogue focused on the identity of the winery’s wines, with the aim of developing a coherent, distinctive style that reflects both the territory and the producer’s vision.
  • PERIODIC TASTINGS AND WINE MANAGEMENT
Guided tastings of the wines throughout every stage of their evolution — post-fermentation, aging, and pre-bottling — with an assessment of their organoleptic characteristics and the definition of any corrective or improvement actions.
  • INTERPRETATION OF ENOLOGICAL ANALYSES
Joint evaluation of analytical data (physicochemical and microbiological), with a focus on the most relevant parameters at each stage of production and decision-making support for the actions to be taken.
  • CUSTOM FERMENTATION PROTOCOLS
Design of tailored fermentation protocols based on the grape variety, the desired wine style, and the characteristics of the vintage, with careful attention to the wine’s aromatic profile, structure, and overall stability.
  • FERMENTATION MANAGEMENT AND SUBSEQUENT STAGES
Support in managing alcoholic and malolactic fermentations and monitoring their regular progression, with careful attention to any potential issues. Assistance in decisions related to racking, lees separation, stabilization, and aging.
  • CELLAR PROCESS OPTIMIZATION
Review of cellar operations, from grape reception through to bottling preparation, with recommendations for technical improvements and process optimization, always focused on enhancing the quality of the final wine.
  • BOTTLING PLANNING AND SUPERVISION
Assessment of the wines’ readiness for bottling, selection of any final adjustments — clarification, filtration, and blending — and technical coordination to ensure the successful completion of the final process.

VINEYARD

Quality begins first and foremost with the land and with those who live it every day. My contribution in the vineyard starts by listening to the producer: to their experience, their choices, and their doubts. I do not directly handle the agronomic side, but I work alongside those who manage the vineyard to translate the potential of the grapes into enological expression. I observe, taste, exchange ideas, and help create a bridge between vineyard and cellar, so that every harvest becomes an opportunity to grow and move ever closer to the wine one wishes to create.

BUSINESS GROWTH

Beyond wine, there is the idea of wine. That is why it is essential to create moments of strategic dialogue, helping the company reflect on its identity, future projects, and desired changes. We talk about style, coherence, positioning, and production choices. Above all, we share visions. Alongside this, I offer training paths dedicated to producers, collaborators, and company teams, designed to foster awareness, autonomy, and professional growth. This is not about marketing or sales, but about giving strength and direction to ideas, so that the company can express itself with coherence and conviction.
